MAMA HOOPER’S HOMEMADE CHILI
People are asking for this, but I don’t have a photo of the actual meal yet…
I’ll update this post when I do.
This recipe is a staple in our home and has been a HUGE blessing on Sundays when we come home from church hungry.

INGREDIENTS:
• 1 TBSP ish of avocado oil
• 1lb grass fed ground beef - cooked ahead or straight in the InstantPot or dutch oven
• 1/2 yellow or sweet onion - chopped/diced to size preference
• 1 can diced tomatoes
• 1 can tomato paste
• 1 can garbanzo beans (or, buy dry and soak overnight to use) — if you use canned, rinse em
• 1 can black beans (or any other kind of beans...kidney, pinto, navy etc…best if bought dry and soaked if you have time and capacity for the forethought because it’s gentler on your digestive system) — if you use canned, rinse em
• 1 tsp ish garlic - I eyeball about a tsp ish of minced garlic, which equals 1 clove
• 2-3 TBSP Aunt Dani’s Famous Taco Seasoning - this is my sister’s famous 😉 homemade recipe
• 2 cups ish chicken stock (or beef if you prefer…I just never have beef stock on-hand, so I use chicken…just know that the beef stock will affect the final flavor) - enough to desired consistency, which is about 2 cups or half a container of the Costco stock.
DIRECTIONS:
This can take as little as 10 min from start to finish, but if you really want the flavors to meld, start in the morning and let it sit all day. You’ll thank yourself because dinner will be hot and ready at dinner time — read a book or take a bath or even a nap when you’d normally be making dinner!
Turn the Instant Pot on "saute" and add avocado oil until warm.
Add and sauté the onion until soft, then drop the garlic in.
If you need to cook the meat, cook now. If not, just dump it in. 😅 (TIP: Make a double batch of taco meat for YESTERDAY’S dinner…save half for chili tonight. 😆 )
Add all other ingredients and seal the lid. Push the "soup" button and let it do its thing!
Top with desired garnish and enjoy for daaays or with company! (I like fresh shredded cheese + sour cream! — Seriously, take the time to shred your cheese block vs buying pre-shredded…pre-shredded cheese oftentimes has natamycin in it as a mold inhibitor, which is essentially antibiotics in your food, which is NO-BUENO. JUST. SAY. NO.)
This is a perfect set-and-go meal for a small crowd and can easily be done stovetop or in a crockpot (the pressure-cooker isn’t necessary, but I like it because it’s easier clean up for me…the pot insert is lighter weight than a dutch oven or crockpot — HA!).
